Lemon Ricotta Pancakes
Dry ingredients –
3/4th cup flour
1.75 tbsp granulated sugar
1 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
Whisk together, Make a well in the center and Set it aside.
Wet ingredients – Mix these in a separate bowl
1/2 cup milk
90g ricotta (1/4 cup + 1/8 cup)
2 eggs
1/2 tsp vanilla
1 tbsp lemon zest
1/8 cup (30ml) lemon juice
1/2 tbsp melted butter
It might curdle. That is ok.
Pour wet into dry and mix until just combined. Batter should be slightly lumpy. Cook. Serve with powdered sugar and Brown Sugar Butter.
